FDA/NSTA Symposium:

Food Safety and Nutrition

Symposium participants work on one of the classroom activities presented.

During this full-day symposium, FDA scientists and master educators guided participants through easy-to-understand explanations about the food label and nutrition, food science careers, foodborne pathogens, and outbreaks. In addition to providing a science update, the presenters modeled activities that participants can use in their classrooms with their students, including a guided tour of "Label Man," an interactive learning program that provides consumers with information to help plan a healthful diet while managing calorie intake.


The program was designed for teachers of grades 5-8. All participants received educational materials from the FDA, including a DVD of the interactive program called: "Dr. X and the Quest for Food Safety." The symposium was held at the NSTA National Conference on Science Education in St. Louis, MO.
