Teaching Through Trade Books: Kitchen Chemistryby: Christine Anne Royce

Journal ArticleDigital resources are stored online in your NSTA Library.

The kitchen is a wondrous place for children to make observations and explore the basics of chemistry. Seize the opportunity and help students build process skills while cooking or baking. Almost everything we eat and certainly everything that is combined in the kitchen has some basis in the physical sciences—from mixtures to solutions to the glorious tastes of food.

I recommend this article to anyone needing books to enhance learning from a solid, liquids, and gases unit. The books discussed are Pancakes for Breakfast and Kitchen Chemistry II. In the Pancakes for Breakfast book, Students learn what a mixture is and the chemical changes that must occur when making pancakes. Students also will learn about acids and bases in the Kitchen chemistry book. There is a follow actvity after having read these books which includes determining a base from an acid. Students make their own indicator fluid fom purple cabbage and test the different liquids (choose the safe ones) to see whch are base and which are acid. I like this activity because the students will see how these concepts are applied in real-like situations.

I though the books that were chosen were great examples of books to use to demonstrate basic chemistry concepts to K-5 students. Both of the supporting activties would require a great deal of prep and access to a stove in one case.

This article describes an activity for young learners that can be used in conjunction with a picture book. Students explore the difference between physical and chemical changes while cooking pancakes. Most of the examples are of physical changes, however. Teachers will also need to have a way to cook the pancakes in the classroom.
